If you want a quick and easy lunch idea, side dish or simply something to snack on while watching TV, these roasted purple carrots are the obvious choice. Tangy and sweet all together, they look pretty on the plate and they will make a great impression on your guests without making you do all the hard work.
RECIPE
about 10 medium sized purple carrots, cut lengthwise
5 springs of fresh thyme
pinch of salt
pinch of pepper
1 teaspoon Herbs de Provence
2 tablespoons garlic olive oil
the juice of one lemon
2 tablespoons Greek yogurt
2 tablespoons crumbled blue cheese
1 teaspoon balsamic vinegar
INSTRUCTIONS
Preheat the oven to 400 degrees F and prepare a cookie sheet with parchment paper.
Cut the carrots lengthwise and arrange on the parchment paper placing the springs of thyme amongst them.
Sprinkle the top of the carrots with salt, pepper, Herbs de Provence, and drizzle with half the olive oil.
Place the tray in the oven and roast for about 20 minutes until slightly browned and tender.
Meanwhile make the yogurt dressing by mixing the lemon juice and the yogurt together.
When the carrots are done remove from the oven, drizzle with the yogurt dressing, top with the blue cheese, the remaining olive oil, and the balsamic vinegar.
Enjoy warm.
