blackberry and yogurt clafoutis


This is a quick dessert that works perfectly for breakfast or for a summery lunch on the patio. I love desserts that take less than 5 minutes to prepare and that include only a few ingredients. By the addition of yogurt, this dessert is light enough to be called breakfast.


RECIPE


for the batter:

  • butter for the pan

  • 1 cup fresh blackberries

  • 4 large eggs, room temperature

  • 1/2 cup granulated sugar

  • 1 tablespoon vanilla sugar

  • 10 oz blackberry yogurt, room temperature

  • 1/4 cup all-purpose flour

to decorate:

  • 2 tablespoons confectioner's sugar

  • 1/2 cup fresh blackberries

  • tulips



INSTRUCTIONS

  1. Preheat the oven to 335 degrees F.

  2. Butter an 11x8 inch oval pan lightly, arrange the blackberries on the bottom, and set aside.

  3. In a bowl beat the eggs with the sugar, vanilla sugar, yogurt and flour until incorporated. Pour the mixture on top of the blackberries and bake for 55 minutes.

  4. Take the clafoutis out of the oven, let it cool down for 10 minutes, dust with confectioners sugar and enjoy with fresh blackberries on top.
