kefir, feta and basil fried bread aka "placinta"

INGREDIENTS
for the dough:
2 cups kefir
2 tsp baking soda
1 egg
2 Tbs vegetable oil
1 tsp sea salt
5 cups, plus more for dusting all purpose flour
for the filling:
2 cups feta cheese, crumbled
2 Tbs parmesan, grated
1 tsp sea salt
1 tsp black pepper
1 tsp onion powder
1 tsp garlic powder
1/2 cup fresh basil, chopped
Other:
vegetable oil for frying
INSTRUCTIONS:
Place the kefir into a large bowl. Add the baking soda, egg, oil, and sea salt, and whisk until incorporated.
Start adding the flour little at a time and with the help of a wooden spoon start forming a soft pliable dough. When all the flour has been used, form the dough into a ball, cover with a kitchen towel and let it rest at room temperature for 10 minutes.
Dust your hands with flour and divide the dough into 12 equal parts.
Roll each dough part into a 6 inch circle, top with about 2 Tbs of the filling, fold the edges of the dough onto the filling, and roll again so that the filling stays inside the dough and you obtain a 6 inch circle at the end.
Heat the oil in a pan, add the breads and fry on each side for about 2-3 minutes.
Serve warm.
