kefir, feta and basil fried bread aka "placinta"

INGREDIENTS


for the dough:

  • 2 cups kefir

  • 2 tsp baking soda

  • 1 egg

  • 2 Tbs vegetable oil

  • 1 tsp sea salt

  • 5 cups, plus more for dusting all purpose flour


for the filling:

  • 2 cups feta cheese, crumbled

  • 2 Tbs parmesan, grated

  • 1 tsp sea salt

  • 1 tsp black pepper

  • 1 tsp onion powder

  • 1 tsp garlic powder

  • 1/2 cup fresh basil, chopped


Other:

  • vegetable oil for frying


INSTRUCTIONS:

  1. Place the kefir into a large bowl. Add the baking soda, egg, oil, and sea salt, and whisk until incorporated.

  2. Start adding the flour little at a time and with the help of a wooden spoon start forming a soft pliable dough. When all the flour has been used, form the dough into a ball, cover with a kitchen towel and let it rest at room temperature for 10 minutes.

  3. Dust your hands with flour and divide the dough into 12 equal parts.

  4. Roll each dough part into a 6 inch circle, top with about 2 Tbs of the filling, fold the edges of the dough onto the filling, and roll again so that the filling stays inside the dough and you obtain a 6 inch circle at the end.

  5. Heat the oil in a pan, add the breads and fry on each side for about 2-3 minutes.

  6. Serve warm.
